Egg Scramble Casserole



Serves 8

Ingredients:

2 tablespoons melted butter
2 tablespoons flour
2 cups of milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheese
1 cup Canadian bacon
1/4 cup chopped onion
3 tablespoons melted butter
1 dozen eggs
4 oz mushrooms

Directions:

Combine 2 tablespoons of butter and flour. Blend until smooth. 
Gradually stir in milk.
Cook until thickened.
Add salt, pepper, and cheese; heat until cheese melts. Set aside.
Saute bacon and onion in 3 tablespoons butter until onion is tender. Add eggs; cook until set, stirring occasionally to scramble. Fold in mushrooms and cheese sauce.

Spoon egg mixture into a lightly greased 12 x 7 x 2 baking dish. Sprinkle with paprika.

Bake at 350 degrees for 30 minutes

NOTE:
May be prepared ahead of time and refrigerated until time to bake. Allow 10-15 minutes more baking time.
